Roasted Vegetables



Enjoy this hot or cold...this is so tasty alongside any meat or chicken dish.

1 Zucchini
1 Potato
1 green capsicum
1 eggplant
6 mushrooms
1 onion
4 cloves garlic
150 g pumpkin
Fresh rosemary
Salt to taste
Olive oil to drizzle

Preheat oven at 180oC. Cut all the vegetables same size cubes and place in a single layer in a baking dish. Scatter rosemary and drizzle olive oil all over and sprinkle with salt. Place in the oven (uncovered) and bake at for 1 hour. Can be served hot from the oven or cooled to room temperature. Serves 4.
Quantity can be halved for 2 people.
