Banana Cake


A moist and soft banana cake made with sweet ripe bananas, desiccated coconut, fresh eggs, full cream milk and a hint of orange essence. I've been making this cake for over 20 years. It's a recipe that is constantly asked for. ENJOY !

AMIRA’S BANANA CAKE

1 cup S/R Flour, sifted
1 teas Bicarb Soda, sifted
¼ teas cinnamon
½ cup sugar
½ cup coconut
¼ cup sultanas, (optional)
½ cup crushed walnuts, (optional)
¼ cup milk
1/2 teas orange essence
2 over-ripe small bananas
2 eggs
¼ cup canola or vegi oil


Mix all dry ingredients together in a bowl. Mash bananas with milk add orange essence, stir to combine. Add to dry ingredients. Beat eggs with oil and add to flour mixture. Stir until just combined. Do not over beat.

Bake at 18OoC for ½ hour.

  2. OH MY GOD Zia you're cakes are amazing, if i change the self raising to gluten free self raising will it still taste good? Actually I just realised I have a book I want to give you about Macarons and Macaroons. My friend writes it, you will love it
