Pasta with Cream & Mushrooms (low fat)


Guess what we had for dinner tonight? Follow this recipe for a scrumptuous low fat meal. If you don't like the low fat concept just substitute the evaporated milk with cream, and don't eat butter for a whole week!

400g pasta(any shape)
Boiling water with 2 teas salt added to cook pasta

Sauce
2 teaspoon olive oil
175g bacon, chopped into pieces
6 large mushrooms, sliced
1 spring onion, chopped
1 clove garlic, grated
375ml can light & creamy Carnation® Evaporated Milk
Black Pepper, freshly grinded, to taste
Parmesan, shaved or grated

Heat oil in fry pan, add bacon and fry until crisp, add mushrooms, spring onion and garlic. Stir until combined and mushrooms are beginning to change colour. Pour on the evaporated milk and simmer until slightly reduced. Turn off heat and set aside while you cook your pasta. Cook pasta in boiling salted water until cooked. Drain and serve pasta with sauce. Sprinkle with parmesan cheese to taste. Yummy Yum and low fat too. Serves 4.
