Sicilian Almond Biscuits

Ingredients

  • 250 galmond meal
  • 250 gcaster sugar
  • 3 or 4egg whites, depending on the size
  • 1 teas vanilla essence
  • 1  lemon, large, zest only
  • 10 glace cherries, halved to top (optional)
  • Icing sugar, for rolling

Instructions

1. Pre-heat oven to 170°C, fan forced.

2. In a bowl, mix the almond flour, caster sugar and lemon zest with a metal spoon.  Add 3 egg whites, to start off with and then add the vanilla essence. Mix with a hand-held beater and continue to add more egg whites as needed until mix comes together.

3. Use your hands to shape the mixture into 20g balls or about the size of a small walnut, or alternatively, put the mixture in piping bag and shape as desired.

4. Roll biscuits in icing sugar and place on a baking tray lined with baking paper or non-stick teflon baking sheets.

5. option 1 - flatten each ball slightly using your two index fingers. Press half a glace cherry on top of each.

6. option 2 - using your thumb and 'pointer' finger make an indentation on the side of each ball.

7. Bake at 170oC fan forced for 15 minutes (make sure it's no more than 15 minutes !)

9. Cool before serving.
