Apple & Blueberry Loaves (low fat)





Ingredients

2 cups self-raising flour, sifted
1 teas bicarb soda
1/2 cup sugar
1 teas cinnamon
1/2 cup apple sauce
1/4 cup milk (and a little more)
1 egg
3/4 cup blueberries, frozen
butter to spread and serve
icing sugar to sprinkle on top

Variation for cupcake style:
replace 1/2 cup apple sauce with:
- 1/4 cup applesauce
- 1/4 cup oil (either olive oil, sunflower oil or vegi oil)

Method

Preheat oven to 180oC (fan-forced)

Prep 1 x 12 muffin tin with cupcake cases.

1. In a large bowl mix together flour, bicarb soda, sugar and cinnamon and set aside.

2. In another bowl mix apple sauce, milk and egg, using a fork.

3. Add wet mix into dry mix and stir using a wooden spoon until all incorporated.

4. Add blueberries and stir gently.

5. Fill cupcake cases evenly with mixture and top each with crumble topping.

6. Bake at 180oC for 20 mins.

7. Allow to cool and spread with choice of butter to serve.

Crumble topping

Mix together in a bowl: ½ cup plain flour, ½ cup rolled oats, ¼ cup firmly packed brown sugar, 90g butter, melted.
