Amira's Lamb or Beef Curry (with coconut milk)

 

AMIRA’S LAMB or BEEF CURRY (with coconut milk)


2 x thumb size grated ginger

2 onions, chopped

4 garlic cloves, minced

2 shakes chilli flakes

1 teas turmeric

1 teas cumin

1 teas coriander

½ bottle of 750ml tomato puree

2 x ¾ glasses of water

1 x 140ml can coconut milk

1 kilo diced lamb or beef

1 cinnamon stick

 

Fry onion, garlic, ginger, chilli, add turemic, cumin, coriander and continue to fry for 2 minutes.  Add sauce, water, coconut milk boil for 2 minutes.  Add lamb or beef and cinnamon stick.  Cook over medium heat uncovered for 1 ½ hours or until meat to tender to your taste.
