Amira's Chicken or Beef Curry

 

Serves 5 people as main meal

 

1 kilo thigh fillets or beef, diced (for 700g and for 1.5 kilos see ingredients below)

2 onions, chopped

2 tablespoons olive oil

4 cloves garlic, minced

1 tab curry powder “Keen’s” brand (Aust)

3 tablespoons tomato paste or 1 cup tomato puree

8 cloves,whole

1 cinnamon stick

2 cups water


Fry onion in olive oil until golden, add crushed garlic and fry again.  Add curry powder and tomato paste, fry (you might like to add 2 tab of water at this stage to loosen the paste).  Then add thigh fillets and fry to coat.  Finally add cloves, cinnamon stick and water.  Give a good stir.

Add lid and cook on medium heat for 40 minutes, stirring occasionally. For beef, cook until tender, approx 1 hour.

Remove lid and cook for 10 - 15 until thicken.

Remove cinnamon stick and whole cloves before serving.

Serve with Basmati rice.

 Variations:

for 700g chicken thigh fillets - use 1 onion

for 1.5g chicken thigh fillets - use 2 tab curry powder.

Method variation for chicken: use less water, just to coat the chicken and give a good gravy, adding more water as needed. Cook with lid on, no need to remove lid to thicken.
