Lisa's Grandma Banana Cake with Lemon Icing

Ingredients

1 3/4 cups of Self Raising Flour
125 g unsalted butter, softened
125 g caster sugar
2 eggs
3 bananas, ripe
½ cup milk
1 teas bicarb soda
1 teas vanilla essence

Method

1. Preheat oven to 180oC.

2. Cream butter and sugar until light and fluffy.

3. Add eggs and vanilla essence and mix again.

4. Mash bananas with a fork and add to the butter mixture, stir through slowly.

5. In a separate bowl add bicarb soda to milk and stir then add this to the banana/butter mixture.

6. Sift flour with salt into banana/butter mixture and stir through until just combined.

7. Pour into greased pan and cook for approx 40 minutes.

Icing

1 ½ cup Icing Sugar
1 heaped teas margarine
Juice of approx ½ lemon
Sprinkle of cinnamon

Sift icing sugar into a bowl, add margarine, squashing it against the side of bowl to soften and stir through. Slowly add lemon juice as needed to form a soft spreadable consistency. Pour icing over cooled cake and sprinkle lightly with cinnamon.
