Easiest Chocolate Cake ever !

A colleague gave me this recipe a few years ago - it's wonderfully dense and chocolatey !

Serve with chocolate sauce (see below) and cream, pouring or whipped.

Yummy also with cut up strawberries, blueberries and raspberries.

Ingredients:

200g almond meal
200g drinking chocolate (I use Cadbury Drinking Chocolate)
200g unsalted butter, softened in microwave (but not melted)
200g caster sugar (I use a little less than this because it's quite sweet anyway)
5 eggs, beaten with a fork

Method:

Preheat oven at 160oC fan forced.

Put everything together in a large bowl and mix until combined.

Line a 21.5cm springform baking pan with baking paper. Spray or brush edges with oil.

Pour mixture into pan and bake at 160oC fan forced for about 55mins.

Remove from oven and leave in pan to completely cool.

Chocolate sauce:

1/2 cup thickened cream
150g dark chocolate (I use Cadbury Dark Melts)
150g milk chocolate (I use Cadbury Milk Melts)

Pour cream in a glass jug and microwave on med heat until very warm but not boiling hot. Add chocolate immediately into the jug. Allow chocolate to sit in the cream for about 1/2 minute then stir chocolate vigorously with the cream until smooth. If not completely smooth, you can microwave the cream/chocolate mixture again in 10 sec bursts.  Chocolate sauce can be made in advance and stored in fridge until ready to use. Warm in microwave just before serving.
