Chocolate & Walnut Biscuits

2 cups plain flour¶

1 ¼ teas bicarb soda¶

1 teas baking powder¶

1 ⅔ cups rolled oats¶

¾ cups walnuts, crushed (measured after crushed, no need to roast)¶

225g unsalted butter, at room temperature¶

1 ½ cups sugar¶

1 large egg¶

1 ½ tab milk¶

2 ½ teas vanilla extract¶

1 cup dark chocolate bits or dark chocolate button melts, chopped into bits¶


  1. Preheat oven temp to 180oC. Line 3 oven tray with silicone or baking paper.¶

  2. Sift together the flour, bicarb soda, baking powder and chocolate bits  into a bowl.¶

  3. In a food processor, process the oats to coarse crumbs. Add to flour mixture.¶

  4. In a nut crusher (or food processor), crush the walnuts. Add to flour mixture.¶

  5. With a handheld mixer cream butter until soft and creamy.¶

  6. Add sugar and mix for about 3 mins until fully combined and fluffy, scraping down the side of the bowl.¶

  7. Add egg and beat again until fully combined.¶

  8. Add the milk and vanilla and beat to mix well.¶

  9. Add the butter mixture to the flour mixture and using a wooden spoon mix to combine, you can even use your hand to mix (with glove) just until the ingredients are evenly distributed.¶

  10. Roll into 22g balls and place on the baking trays.¶

  11. Flatten with a fork and bake for about 12 minutes or until light brown, rotating the trays at half time.¶


Makes approx 36 biscuits¶
