Deep Dark Chocolate Cake

A friend of mind gave me this recipe. It is so quick and easy and makes lovely, fluffy cupcakes also, just pour the mixture into a jug and fill your cupcakes. The mystery about this particular recipe is the boiling water that is added at the end. It looks like thick hot chocolate and that it just won't bake because of the high liquid content BUT the end result if absolutely amazing. You should give it a go !

2 cups plain flour
2 cups caster sugar
3/4 cup cocoa powder
1 1/2 tsp bicarb soda
1 1/2 tsp baking powder
1tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tspn vanilla essence
1 cup boling water

Combine dry ingredients.
Mix together eggs, milk, oil + vanilla.
Add to dry mix and mix well.
Add boiling water to mixture and mix well.
Bake 40min at 180 (mod).

You can double quantity and therefore bake it in a deep roasting tray lined with baking paper for 60 min.
You can also make this cake with a mixmaster but also just mix it with a spoon and both come out fine. If you are using the mixmaster, normal sugar works fine.
