Bread No Knead (using casserole pot)

 



3 cups plain flour

¼ teas yeast, dried

1 ¼ teas salt

1 ½ cups water, room temp

Flour for dusting or semolina or wheatgerm


  1. Flour, yeast, salt, mix with fingertips.

  2. Add water, mix with fingertips and hand in a circular motion for about 5 secs until comes together but still very sticky.

  3. Let rest in bowl, covered with plastic wrap for 12 - 14 hours (I did it for 14 hours).

  4. Turn out onto floured bench, pat into round shape (dough will be a little flat).

  5. Fold ends to the middle.

  6. Put seam side down onto tea towel dusted with flour.

  7. Dust top with a little more flour.

  8. Cover with other half of tea towel.

  9. Allow to rest for 1 ½ - 2 hours (I did for 2 hours).

  10. 40 minutes before dough is ready put pot (empty) and covered with lid in oven and turn on oven to 430oC.

  11. Leave pot and lid in oven for 40 minutes to heat up.

  12. Remove from oven and remove lid.

  13. Invert the dough seam up into the pot.

  14. Return pot in oven and bake covered at same temperature for 40 minutes.

  15. Then remove lid and bake for another 15 minutes until loaf is beautifully brown.


I've just also recently discovered this recipe - no knead and no need to pre-heat your oven ! I haven't tried it yet but will soon.
