Amira's Tira Mi Su

Serves around 8 people

Ingredients

250g mascarpone cheese
300ml thickened cream
2 eggs
2 cups Italian coffee
24 thin savoradi biscuits
5 tab sugar
2 tab drinking chocolate
Pinch of cream of tartar
Splash of Tia Maria liquor

1 x Pyrex Oblong glass container:
23.5cm x 18.5cm x 7cm

Method

  1. Make Italian coffee. Pour into a bowl and add 1 tablespoons of sugar. Allow to cool then add Tia Maria. Set aside.
  2. In 2nd bowl add egg whites and 2 tablespoons of sugar, add cream of tartar, beat on medium speed until soft peaks form. Set aside.
  3. In 3rd bowl add egg yolks and 2 tablespoons of sugar, beat on medium speed until pale in colour and mixed well. Set aside.
  4. In 4th bowl beat cream until soft peaks form. Add mascarpone cheese to cream, mix gently until combined.
  5. To mascarpone mixture add the egg yolk mixture, mix to combine, then fold through egg white mixture gently.

Assembling

  1. Add a little of the mixture to the bottom of the serving dish.
  2. Dip savoradi biscuits one at a time and layer on the bottom of the dish.
  3. Add ½ of the mixture on top of the savoradi biscuits.
  4. Sieve drinking chocolate over the mixture
  5. Dip the rest of the savoradi biscuits one at a time and layer on top of the mixure
  6. Add the other ½ of the mixture on top of the savoradi biscuits.
  7. Sieve drinking chocolate over the mixture.
  8. Wrap with glad wrap and refrigerate overnight.
