Amira's Neiman Marcus Cafe Biscuits - Chocolate and Walnut
Adapted with Amira's variations from Neiman Marcus Cafe $250 recipe !
Ingredients:
2 ½ cups oats or quick cooking oats
250g unsalted butter
1 cup white sugar
1 cup brown sugar
1 teas vanilla essence
2 eggs
2 cups plain flour
1 teas bicarb soda
1 teas baking powder
375g mixture of chocolate buttons & chocolate chips (dark & milk)
250g Cadbury chocolate bar, grated (optional)
1 ½ cups chopped walnuts
Method:
1. Preheat oven to 170oC fan forced.2. If using oats process in a food processor a fine powder otherwise quick cooking oats will suffice.
3. Cream butter and both sugars.
4. Add eggs and vanilla, mix together with flour, oats, baking powder and bicarb soda.
5. Add chocolate chips, chocolate bar (grated) and walnuts.
6. Roll into balls 30g and place 2 inches apart on a cookie tray lined with silicon sheets.
7. Flatten slightly with a fork and back for 20 mins at 170oC fan forced.
